I’m all about quick and healthy meals. Key word is quick! Most nights we eat a home made dinner, not fast food. Most nights, but not all nights. It works out best when I meal plan, grocery shop to the plan, and know each day what I’m going to do. I hate the feeling of getting home at the end of a long day, so exhausted I can’t think straight, and having no idea what to do for dinner.
This week we tried something new and it was great! I’ll put the link below to the original recipe, but I did make these modifications:
- I bought broccoli already chopped. Because…it’s already chopped.
- For the rice, I substituted cauliflower “rice”. If you haven’t tried this stuff, it’s great and even my girls love it! We buy it at Costco.
- I bought a premade soy sesame sauce. Because…it’s premade! I’m all about saving time. And this probably saved me money too, as I didn’t have the sauce ingredients on hand.
Bonus! This was great left over the next day.
