One Sheet Lemon Pepper Salmon

So as I’ve said before, I need dinner meals that are quick, easy, and healthy. This salmon is delicious and probably the easiest thing we make on a regular basis. Now. I’m lucky. I get this. My girls will eat fish and they will mostly eat veggies, especially my older one. While yes, you might say we’re “lucky”, we’re also pretty big on not running a buffet in our house – meaning the kids eat what we eat, with little exception. I don’t have the time or energy or budget to make custom meals. (Note – I didn’t say we NEVER customize a meal for them. Sometimes they just don’t like what we eat or I know it will be too spicy and make a kid version or I mail it in and fix them instant mac-n-cheese and hot dogs. It happens. And it’s ok.) But in general, if they don’t like dinner and don’t want to eat it…well. They’ll just have to be hungry. I’ll also add, I’m not a HUGE fish fan or a HUGE brussel sprout fan, but I still love this meal.

Let me apologize in advance…all of my photos are pre-cooked. Usually by the time dinner is done, the natives are restless and I’m so busy getting food on the plates, I forget to take “after” pictures! I’ll have to work on that. On to the recipe!

Preheat the oven to 425 degrees. We get a large piece of salmon from Costco. I coat both sides in olive oil and sprinkle with a lemon-pepper mix and salt. Then I place on a large cookie sheet. Here I also put a few lemon slices on top.

Next I took our veggie (brussel sprouts also bought from Costco) and prepped them by cutting the ends off and slicing in half any larger sprouts. I coated the sprouts in olive oil, salt, pepper, and some parmesan cheese. (Side note – brussel spouts are an acquired taste – am I right? They’re not my favorite, but my husband loves them. You could substitute other veggies here easily – broccoli, asparagus, green beans…to name a few.) Next I lined the salmon with the veggies on the cookie sheet.

Bake at 425 degrees for 15-18 minutes (look up cooking times for your salmon size.) Serve hot and enjoy! Bonus – This makes great left overs!
